Instant Pot Carolina Style Ribs

I am still loving my Instant Pot, and have been really busy trying out new recipes in it. I thought it might be nice to be able to come home on a weeknight, and make some quick ribs for dinner.

This recipe takes the tiniest bit of prep work. First, you’ll want to whip up a batch of my Eastern North Carolina BBQ sauce.

Take a rack of baby back or St. Louis style ribs and cut into three sections. Season the ribs with your favorite pork rub.

*Note: My first time around with the recipe I did do two racks, but I had to stack them.

Put your ribs in a plastic bag with a cup or so of the Carolina sauce you just prepared, and marinate for 4 to 24 hours. I actually put these in the marinade the night before, and when I came home from work the next day cooked them up for a quick weeknight dinner.

When you are ready to cook, insert the rack that came with your Instant Pot in the cooker along with the apple juice (a good quality kind), and apple cider vinegar.

Turn on the cooker to the saute setting for a few minutes to heat the mixture, and then add your ribs to the cooker. Close and lock the lid. Set to the Meat/Stew setting and adjust the time for 23-minutes. Once done, do a 10-minute natural release according to your manufacturers instructions.

When cooking is complete, remove ribs gently to a baking sheet. Brush the Instant Pot Carolina Style Ribs with your favorite BBQ sauce, and broil for 5-10 minutes or until bubbly and caramelized.

*Note: The ribs will be very tender when removed from the Instant Pot, you can tell because the meat has shrunk a bit from the tips of the bones.

Ingredients

  • 1 rack baby back or st. louis style ribs cut into 3 pieces
  • 1 recipe Eastern North Carolina BBQ Sauce
  • pork rub enough to coat
  • 2 cups apple juice good quality
  • 1/3 cup apple cider vinegar
  • BBQ sauce enough to coat

Instructions

  1. Prepare one recipe of Eastern North Carolina BBQ sauce, and set aside. 

  2. Cut ribs into three pieces, and coat with BBQ rub. 

  3. Place in plastic bag with a cup of Carolina sauce for up to 24 hours but not less than 4 hours. 

  4. Add apple juice and apple cider vinegar to cooker, and warm on saute setting for a minutes. 

  5. Add rack that came with cooker to pot, and arrange ribs in cooker. Close and lock lid according to manufacturers instructions. 

  6. Set to Meat/Stew setting, and reduce time to 23-minutes. When done cooking do a 10-minute natural release according to your manufacturers instructions. 

  7. Remove ribs gently to a baking sheet. Brush with Carolina sauce, and coat with your favorite BBQ on the meat side. Broil for 5 - 10 minutes or until bubbly and caramelized.
