Air Fryer Pumpkin Seeds are easy to make and a healthy snack! Roasted in the air fryer until crispy these are delicious seasoned with your favorite flavors. This is a great way to use the whole pumpkin with zero-waste during the Fall season.
Remove seeds from pumpkin, and separate them from the pulp. Rinse under water in a colander. Set aside on plate or paper towel for 30 minutes to dry.
Air fry at 360-degrees for 10-15 minutes until desired level of crispiness is reached. Toss every five minutes until done.
Serve immediately, or store at room temperature for up to three months. Can be stored up to one year in refrigerator or freezer.

Soaking the seeds is not necessary, and may lead to a chewy instead of crispy texture. You can roast other winter squash or any type of pumpkin seeds using this recipe. You can eat the pumpkin seeds with or without the shells.Add these pumpkin seeds to salads, smoothies, granola, or oatmeal. Change up the flavors with different seasonings then add as a crunchy topping to different soups.
