  • Brownie mix - any of your favorite brownie mixes will do.
  • Melting chocolate - if you decide to candy coat the Instant Pot brownie bites then you won't regret it! Do not use chocolate chips for this. Stick with chocolate melting wafers, or chocolate bark.
  • Decorations - the sky or your pantry is the limits. Sprinkles, chips, powdered sugar, colored sugar sprinkles, and chocolate chips are all great for this.

How to make this

Step 1: Prepare the brownie batter

In a large bowl combine the brownie box mix and the other ingredients for the box mix you purchased. Typically these are water, oil, and eggs.

The portions I list in the recipe card for these ingredients may be different from your box mix. Be sure to use what was listed for your brand.

Mix either by hand or with a mixer until all the ingredients are combined and the batter is relatively smooth.

Step 2: Cooking the brownies

Grease the inside of a silicone egg bite tray very well with either a cooking spray oil or other oil with a brush. Fill each cup leaving about ¼" of space at the top. Cover lightly with foil.

Pour the minimum amount of water for your model Instant Pot into the pot.

  • 3-Quart Instant Pot - ½ cup
  • 6-Quart Instant Pot - 1 cup
  • 8-Quart Instant Pot - 2 cups

Place the rack with the egg bite mold on top of it into the pressure cooker. Stack the second silicone mold on top. Seal and cook on high pressure for 30-minutes followed by a 10-minute natural pressure release.

Remove and cool completely on a wire rack. One box will fill almost both the molds. Once cooled enjoy, or decorate with a chocolate coating and sprinkles.

Expert tips

Be sure not to put to much oil in the silicone molds. Wipe out excess with a paper towel if there is to much. For brownies with chocolate overload add ½ cup chocolate chips and ¼ cup chocolate syrup to the batter. You can also add nuts to the batter if you wish.

For more cake-like brownies add an extra egg to the batter. You can also make small appetizer sized brownies by only filling the molds by ½ of what I've recommended.

If you're dipping in chocolate it's helpful to use a cake pop stick or wooden skewer to dip the Instant Pot brownie bites into the melted chocolate. Carefully remove them to a plate to cool and harden. If using sprinkles be sure to use them prior to the chocolate hardening.

What are my brownies dry?

The answer is that they can be over- or undercooked.

What does an extra egg do to brownies?

An extra egg will make your brownies more cake-like in texture and appearance.

Should you put brownies in the fridge after baking them?

You can do this but it's not necessary. Storing them in a plastic bag, airtight container, or covering the baking dish with plastic wrap are perfectly good storage options.

Serving suggestions

Serve on their own or sprinkled with powdered sugar for a quick treat. You can also melt chocolate melting wafers and coat the brownies, and then for fun decorate them. Serve them alone or as the centerpiece for a delicious ice cream sundae.

Storage

Store in an airtight container, or plastic bag for up to one week. It's not necessary to store in the refrigerator but you can if you like.

Ingredients

  • 16 ounces brownie mix or one box
  • cup oil I used olive oil, or use what the box recipe calls for
  • 2 eggs or the number of eggs on your box recipe
  • 3 tablespoons water
  • Chocolate melting wafers, sprinkles optional

Instructions

  • Mix together in a large bowl the brownie mix, water, oil, and eggs. Or as directed on your mix.
  • Brush the inside of the silicone molds with oil, or spray with cooking spray. Fill each mold leaving at least ¼-inch room at the top. Cover with foil.
  • Add the minimum amount of water into your Instant Pot.
  • Stack the molds on the wire rack and lower into the pot.
  • Cook on high pressure for 30-minutes followed by a 10-minute natural pressure release.
  • Cool on wire rack then serve or decorate.
  • Serve immediately or store in an airtight container for up to one week. These are great on their own or served with ice cream.

    I saw this post and I just had to make the fudgy treats. I have got to tell you that they were a huge hit with the grandsons. They may not appreciate Little Debbie's history, like I do, but they sure did chow down on the bites. Will be making them again.
